A mental ocean view from a a bear's cave

We are spending the month of May perfecting both the food menu and the wine list – they will be available here on the page as soon as they are ready. The bear sets the pace.

For more than a century, Bjørnekælderen has represented the essence of Danish cuisine. We intend to keep it that way. But on our own terms.

Smørrebrød is not a museum. It is an idea. An idea you can break down, think through, and reassemble without bread as a base. Smørrebrød is not a dish. It is a manner of perceiving food.

Fish before meat. Seasons before trends. Primarily pescetarian.

On Sunday the 1st of February, Bjørnekælderen represented by Thomas Wetle, won 'Dish of the Year' in the category 'Sweet'. The winning dessert of cultured milk ice cream and sugar kelp will naturally make its way onto the menu at Bjørnekælderen. It is okay to be sweet and still mean business.
